1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
1/4 cup milk
1 pkg. (4 serving size) JELL-O Vanilla Flavor Instant Pudding & Pie Filling
1 (8 ounce) can DOLE Crushed Pineapple in Juice, undrained
1 (8 ounce) tub COOL WHIP Whipped Topping, thawed, divided
1 (6 ounce) HONEY MAID Graham Pie Crust
1/4 cup BAKER'S ANGEL FLAKE Coconut, toasted
1 1/4 cups sliced fresh strawberries

DIRECTIONS
Beat cream cheese and milk in large bowl with electric mixer until well blended. Add dry pudding mix and pineapple; mix well. Gently stir in 2 cups of the whipped topping; spoon into crust.
Refrigerate 3 hours or until firm.
Top with coconut, strawberries and remaining whipped topping just before serving. Store leftovers in refrigerator.

I needed something quick and easy to pull together for a dessert and saw this was recipe of the day...I was VERY skeptical but you never know how something will taste until you try it...I REALLY like the flavor of this quick and easy cheesecake and I would make it again and bring it to parties!!! YUM!

This dessert was absolutely delicious! The only thing I did was add a bit (about a palmful) of toasted coconut to the mix before I put it in the refrigerator to add a little more texture. Loved it!

Sooo yummy and not too sweet--we love it! Based on some of the other reviews, I made the following changes: used a 9" cake pan (deeper), made my own graham crust, used a six serving size pudding mix, and the whole tub of cool whip; I also put this in the freezer for about three hours and then transferred it to the fridge for the remaining few hours before serving. This set up and served very well. I think next time, though, I will just put the coconut (untoasted, maybe?) right into the pie mixture and use a little more pineapple. This pie was really easy to make and made for an excellent summer dessert.

I'm giving this 4 stars only because I made so many changes to the original recipe. With the changes I give it 5 stars -it tastes very similar to a hawaiian pie from a famous breakfast stop! First I didn't use a graham cracker crust, instead I made my own pie crust. I also added a handful of chopped pecans to the cream cheese mixture. I poured it into the baked and cooled crust and refrigerated it overnight. The next day, I mixed a pound of strawberries with some strawberry glaze and covered the entire pie with it. Right before serving I beat heavy cream with powdered sugar and vanilla for some fresh whipped cream and topped the pie. Finally, I sprinkled it with a little toasted coconut and chopped pecans and ... fabulous! The pie itself doesn't set too great so it kind of collapses when when you serve it, but boy does it taste good!! The restaurant pie we usually buy costs $14 and we can't brag that it's homemade!

I made a lower calorie version, using light cream cheese, non fat milk, a reduced fat crust, and pudding and Cool Whip sweetened with Splenda. It was a hit! My husband loved it. Perfect for summer.
