Just made this recipe today for breakfast baked in a bread pan instead of a muffin tin. Taking in to account other reviews I made the following changes:
1 1/4 cup whole wheat flour with 1/2 cup white flour, 1/4 cup splenda brown sugar BLEND along with a scant 1/2 cup grandulated sugar mixed with splenda. Added 1 teaspoon vanilla, 1/4 teaspoon nutmeg, 2 Tablespoons ground flax, 1/2 cup chopped walnuts, and 2 Tablespoons extra milk.
The loaf took 35-40 minutes to bake. I sliced strawberries on the side and it was a healthy and really tasty breakfast. Husband love, love, loved it, and I did too! Try it - you'll not be sorry.
