This is one of my favorites, especially for potlucks. I make a reduced fat and calorie version by using sugar free pudding, unsweetened strawberries sprinkled with a little Splenda, and sugar free angel food cake. I top the whole thing with sugar free whipped topping. Unless I tell, no one realizes it is sugar-free, and it's a big hit with my diabetic friends.

I made this for the dessert part of a chili cookoff at church and it was a hit! I of course made some changes to it :) I used yellow cake. I did not add the cream cheese and I used vanilla pudding mix with the lemon yogurt and doubled them both for more of the pudding layer. Since my strawberries were so beautiful and I was in a hurry I just used some strawberry perserves then layered the sliced strawberries on top of that. To top it off I took three of the big strawberries, removed the stems and cut them to fan out and then placed one in the center with the stem on. Not only a beautiful dessert but cool and refreshing!

This is a great recipe, although I messed with it - not too much though. I used a boxed lemon cake recipe and added fresh lemon juice to the batter. I made the custard mix with more fresh lemon juice instead of the water/grape juice and also didn't go low-fat (I was feeding a bunch of guys, they don't care). Instead of the strawberries I made a fresh blueberry, sugar, cornstarch, lemon juice compote and poured it between the layers of cake and custard. I also made a batch of whipped cream to spread and sprinkled blueberries on top. It was wonderful - thanks for the recipe - I would like to try it with strawberries too.

I have made this recipe a couple of times, and it's fantastic! Very light, a great dessert for a potluck. How about using blueberries or raspberries?
