The puff recipe is standard, and produces good puffs; however, the filling is soupy and keeps the odd yellow/cream color of the evaporated milk. If you are looking for a pretty, light, whipped filling, this is not it. In addition, the flavor is very contrived (thanks to the huge amount of lemon extract.) It may be better with the use of a combination of lemon zest and lemon juice. I prefer more of a whipped filling, and was disappointed with both the flavor and consistency of the end product

Mm... these puffs were pretty good, my dad loved them. Soft and tender; I only used the puff recipe and filled them with whipped cream instead. Rather than scraping the wonderful soft flesh out, I slit a hole in each puff and piped the cream in. Very good- my only complaint is that they stuck to the aluminum foil I used (I did spray it with nonstick cooking spray).. maybe wax paper will work better?
