Strawberry Coffee Cake

INGREDIENTS

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 1 1/2 cups sliced fresh strawberries
  • TOPPING:
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup cold butter
  • 1/4 cup chopped pecans

DIRECTIONS

  1. In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, beat the egg, milk and butter. Stir into dry ingredients just until moistened. Pour into a greased 8-in. square baking dish. Top with strawberries.
  2. For topping, combine flour and sugar in a bowl; cut in butter until crumbly. Stir in pecans if desired; sprinkle over strawberries.
  3. Bake at 375 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cut into squares; serve warm.

As is, I think the recipe uses too much butter and sugar. I decreased the sugar by 1/4 cup and substituted the 2 tbsp called for in the batter with 2 tbsp applesauce. I also decreased the amount of butter in the topping to 3 tbsp.

Made this for an office breakfast club meeting and it was delicious. Made exactly as described and people really like the sweetness of the strawberries added to the coffee cake. I did make one addition though and used some of my extra strawberries with sugar to place over the cake before eating. Made the receipe even better. Thanks.

Wow, this was amazing! I followed the recipe exactly and I was sure it wouldn't work (seem like not enough batter), but it was pefect. I had to bake it a little longer, but I used a glass dish so I had the oven cooler at 350 degrees, so not sure if they made an impact on timing. I think next time I will use a few more strawberries. I brought this to a brunch and everyone raved. I will definitely make it again.
