I made this cake for the first time and followed the recipe...I should have read the reviews first (live and learn). I used frozen strawberries as the recipe called for. The cake still turned out excellant, but fresh strawberries would have probably been much better. It is the moistest cake I have ever eaten! The icing (if you want to call it that!) was another story. What a mess! Before even attempting to put it on the cake (and I made the 3 layer one) I added 3/4 of a tub of Cool Whip I had to try to thicken it up and get a better consistency. Trying to frost it was a disaster. The layers kept sliding around because the icing was so runny. And trying to frost the sides was horrible...the frosting just kept pooling onto the bottom of the plate. I finally gave up and put the whole mess in the frig. I thought maybe it would be a little easier to work with if it was cold.
It was, but I hadn't quite straightened the layers out them when I put the cake in the frig, so the cake looked like the leaning tower of pisa! I managed to get the rest of the cake frosted. When I presented it at my family party, I apologized for the look of the cake, but hoped it tasted better than it looked. I WAS RIGHT! It was absolutely delicious! Everyone loved it...even the icing. Although next time I will probably just use Cool Whip. All in all, it was a delicious cake, albeit not a very pretty one with that slippery icing.
