My husband (huge critic) said it tasted like it was bought from a bakery. My sister (an accomplished baker) loved it and asked for the recipe. Thank you to those who suggested using olive oil and dicing up the strawberries.

changes made for a HEALTHY, AMAZING STRAWBERRY BREAD RECIPE: 4 cups of strawberries, 1.5 cups of sugar, 1/2 tsp salt, 1 cup applesauce (instead of oil), 5 egg whites and 1 egg yolk (instead of 4 whole eggs), and omit the pecans, if desired. It was sooo yummy with these changes. I used a bundt pan though, and I had to almost double the baking time. Personally, I like to eat it cold. When it first came out of the oven, I tried it and I thought the strawberries were too sour when they are hot, but the next day after refrigerating it, it was amazing!! The whole family loved it! I'm making this again next week for a potluck and I think I'll put chocolate icing on it with sliced strawberries and bananas on top. :D

Soooo moist. I make this bread during the holiday's. It is simple to make and a delicious treat to give as gifts to my neighbors. I bit of a change from the normal sweet treats.

I made this bread after following all the reviews and added more strawberries. it took over 90 minutes to bake and still it is not done. it is gooey. I wont be making this again

I made this according to recipe with no changes. I only rate it 3 stars because there is very little strawberry flavor to it and there is way too much oil in it. The bread literally leaves grease on your hands after touching it. I expect that from pepperoni pizza, not from bread. It had a good flavor but it was more cinnamon not strawberry. I will try it again with the tips from other reviewers... less oil, more berries.

Makes 6 mini-loaves, I used them for gifts (the ones I didn't eat myself!). The mini loaves took 40-45 minutes and I absolutely loved the crispy edges on this bread. Very good!

I liked it! I adjusted a bit since other reviews said the strawberry flavor was lacking a bit. I added more strawberries so that I had a cup *after* they were sugared (sugaring compacts them), and added a teaspoon of fresh lemon juice to accent the flavor (an old trick from making apple pies when the apples are a little bland) plus some vanilla as recommended by another reviewer. I thought almonds would be nice (and they are cheaper than pecans) so I substituted 1/2c sliced almonds. Also threw in a tablespoon of flax meal and subbed half applesauce for the oil. Subbed 50-50 ginger and allspice for the cinnamon because my son is allergic. It ended up baking for about 65 minutes and still wasn't quite done so I left it in the oven after it was turned off to finish since it was still a little soft on top. It finished perfectly and tastes great! I only gave 4 stars because of the poor nutritional quality of the flour and sugar. Next time I'm going to add some wheat germ and use less sugar. Maybe some orange peel as well. A little Grand Marnier or almond extract would be good in this too.

WONDERFUL with the changes as follows: less sugar (1.5 cups), more strawberries (3 cups), and replacement of all the oil with applesauce (1 cup). Great flavor and ended up with 4 mini loaves and 9 muffins! This is a keeper!

This was great! I doubled the fruit, added a little vanilla extract and lemon juice, and cut the oil and sugar. I've never had strawberry bread before, but will definitely be adding it to my list of good recipes.

This is fabulous with the changes noted by others. (Less oil and sugar and cinnamon, add a splash of vanilla extract and more strawberries...I sliced the strawberries with a 6mm blade in the food processor and then measured out 4 cups) I took it to a family weekend away and it did not make it past the first day. The kids especially loved it, but everybody thought it was good stuff.

I made this recipe exactly as written. This was a tasty bread but I couldn't taste the strawberries at all. It tasted mostly like cinnamon bread. It took a lot longer to bake than recommended as well. If I make it again I'll use more strawberries as other reviewers have recommended and cut down on the cinnamon. There was way too much oil, so next time I would perhaps use milk or water and halve the oil. This recipe definitely has potential, but it wasn't what I expected.

I used almost 3 cups of strawberries and decreased the cinnamon by half. I also used approx. 1 c. of applesauce in place of the oil and added about a half TBSP. of vanilla. The bread turned out sweet enough for breakfast but not sweet enough to be dessert.

Good, not great. I added more strawberries and less cinnamon as suggested, also used 1/2 wheat flour. It wasn't as moist as the Strawnana Bread recipe on this site in comparison.
