Original Recipe Yield 1 - 9x5 inch pan or 2 small loaves
 

Ingredients

  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 4 eggs
  • 1 1/4 cups vegetable oil
  • 1 cup chopped pecans
  • 1 (10 ounce) package frozen strawberries, thawed

Directions

  1. Grease and flour a 9 x 5 inch pan well. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large mixing bowl, sift together sugar, flour, cinnamon, salt, and baking soda.
  3. In a smaller bowl, beat the eggs and oil. Stir in pecans and strawberries. Add egg mixture to the sifted ingredients, and stir until just combined.
  4. Bake for 1 hour, or until tester inserted in the center comes out clean.
