INGREDIENTS
1 (8 ounce) can pineapple chunks
1 pound skinless, boneless chicken breast halves - julienned
2 tablespoons cooking oil
1 medium green pepper, julienned
3 tablespoons brown sugar
1 tablespoon cornstarch
1/4 cup ketchup
3 tablespoons soy sauce
6 cups torn fresh spinach
1 cup cherry tomato halves

DIRECTIONS
Drain pineapple, reserving 3 tablespoons juice in a small bowl; set pineapple aside. (Discard remaining juice or save for another use.) In a skillet or wok, stir-fry chicken in oil for 5 minutes or until no longer pink. Add green pepper; stir-fry for 2-4 minutes or until crisp-tender. Meanwhile, add brown sugar and cornstarch to pineapple juice; mix well. Stir in ketchup, vinegar and soy sauce until smooth; add to skillet and cook until thickened. On a large serving platter, arrange spinach, pineapple and tomatoes. Top with chicken and green pepper; serve immediately.

Diabetic Exchanges: One serving (prepared with unsweetened pineapple and low-sodium soy sauce) equals 2 lean meat, 2 vegetable, 1 fruit; also, 230 calories, 480 mg sodium, 53 mg cholesterol, 22 gm carbohydrate, 21 gm protein, 8 gm fat.

This is absolutely delicious! The sauce is good, but is made excellent with 1 tbsp honey. It tastes like the "brown sauce" you get at a Chinese restaurant, only sweeter and tastier. The ingredients come together really nicely to make this very enjoyable! Plus, I added peanuts for decoration and crunch.

The recipes mentions adding vinegar with the soy sauce and ketchup, guessed at the type and amount of vinegar. Added 1 tablespoon of apple cider vinegar. Might add a little more next time.

I was pleasantly surprised with the combination of flavors in this recipe. It tastes like a salad you might order at Applebee's, but healthier. I added honey to the "sauce" for sweetness and poured extra sauce over the finished salad as a dressing. Delicious and VERY FAST and EASY!

Made this for dinner last night and it was a big hit! I did add 1 T. of honey and 2 T. of cider vinegar as other reviewers suggested. We absolutely loved it! This will be seeing a lot of family picnics this summer. The best part is...I get to have the leftovers today for lunch! YAY! Thank you for posting this easy, delicious recipe.

I was very impressed at how tasty the salad was!!! I'm usually one to one try recipes that have a lot of ratings, but this one looked good enough to venture out of my norm. I too added 1 tbsp of honey and 2 tbsp of apple cider vindegar. This recipes will definitely be a part of my routine dinner menu!
