There's just something about soy sauce and lemon juice that makes flank steak become moist and flavorful. The longer you marinate the meat, the more tender it gets. Grill and slice on the diagonal, and you have a great meal.

Honey, vinegar, garlic, ginger, oil and soy sauce are blended and then poured over flank steak. The meat sits in this tangy marinade overnight in the fridge, and emerges flavorful and very tender. Grill, slice, and serve.

Skirt steak is an inexpensive cut of beef taken from the diaphragm muscle. It ranks with filet mignon as my favorite juicy and tender cut. It comes in long, narrow strips about 3/4 lb. each. The grain runs across the narrow side and so for serving the steak should be cut into serving-size pieces with the grain so that it can then be cut into bites against the grain.
