You HAVE to let this steak sit overnight. Don't bother making it if you can't put in the time, because the payoff is worth it. This staple in our household is a favorite of all who try it! You can BBQ in summer or broil in the winter for a perfect, filling meal. I like corn on the cob and some sort of rice to complement this mouth watering steak.

This is a marinade for any type of steak, but works well for tougher cuts when left for a couple of days.

This appetizing flank steak marinates overnight, so there's little last-minute preparation to worry about.

Grilled or Fried Skirt Steak

Skirt steak is an inexpensive cut of beef taken from the diaphragm muscle. It ranks with filet mignon as my favorite juicy and tender cut. It comes in long, narrow strips about 3/4 lb. each. The grain runs across the narrow side and so for serving the steak should be cut into serving-size pieces with the grain so that it can then be cut into bites against the grain.

There's just something about soy sauce and lemon juice that makes flank steak become moist and flavorful. The longer you marinate the meat, the more tender it gets. Grill and slice on the diagonal, and you have a great meal.

Marinade seasoned with chili powder and paprika gives grilled flank stead a robust flavor. 'This treasured recipe from a German neighbor opened up my taste buds to a whole new world,' comments DiAnn Mallehan of Grand Rapids, Michigan.
