This recipe is so simple and tastes just like the 'deli' style. The carrot adds just the right flavor.

Santiago's Stuffed Squid

This recipe originates from Spain. It's tender and moist, not a typical chewy squid dish. It's simple to prepare, rich, scrumptious and definitely a favorite in our home! You may use butter instead of olive oil and black pepper instead of paprika if you prefer.

Thinly sliced, raw cauliflower and cooked shrimp, marinated in a creamy dressing, are the main ingredients in this unusual salad. This has always been a hit at potlucks and family get-togethers. It tastes best if you make it a day before you plan to serve it.

This is a warm salad - cooked mushrooms poured over mixed greens. The warm mushrooms are supposed to wilt the lettuce a bit. Try to use the pre-packaged mixed colorful lettuce which is sold in Grocery stores. A salad that is done in no time if you want to try something different.

This is a very nice chopped salad with two kinds of lettuce, artichoke hearts, red onion and pimento thrown in for a bit of color and sweetness. The vinegar and oil dressing has lots of Parmesan cheese, and pours deliciously over this salad for six.

This salad uses a simple oil and lemon juice dressing with just a pinch of garlic, which allows all the flavors of the spinach, bacon, and cooked eggs to shine.
