My husband hates squash and carrots and ate the whole thing. (I subbed mushroom soup for the chicken.)

Good comfort food, I agree. Pretty salty, but I like that. I cut the butter amount in half, added extra squash and used cream of celery soup(all I had on hand). Really tasty. Actually used it as the main dish with a salad.

This was delicious! I finely shredded the carrots, which added great color throughout the casserole. Many times squash casserole can be pretty bland looking (and tasting). Took it to my office party and it was 3/4 gone by the end of the luncheon.

Very good comfort food! I omitted the carrots (I don't like them). I also cheated the clock and baked this in the oven at 350 until it was bubbly and the stuffing on top was toasted, instead of waiting on the crock pot. I precooked the onions until they were soft, added the squash, and some corn (kernel and creamed).

This is so good, when I brought it to a small potluck dinner, 3/4 of it was gone in an hour! I had a 12 oz box of stuffing, so I used the entire thing and increased the margarine to 3/4 c. It smelled so good while it was cooking, it was hard to resist eating it before the potluck!

Very good! Everyone loved. It is a little heavy and rich, but it went over with everyone, even with the kids. I used my own stuffing that I made by using a loaf of rosemary bread that did not rise well, crumbling and toasting it. I then added the butter and made the rest of the recipe as written. It was delicious. I think I may try it again and hide some other veggies in there as well. Maybe broccoli? Good recipe, thanks for sharing.

Thanks for sharing a really great recipe. A small can of diced water chestnuts makes a great addition. Always a hit with everybody.
