Skillet Squash and Potatoes

MY NIECE suggested I try cooking squash and potatoes together. I found that potatoes really do enhance the flavor of squash. I made up this recipe, and it turned out to be a keeper--a great side dish for any entree and a complement to other vegetables as well. --Bonnie Milner DeRidder, Louisiana

Sliced potatoes, green peppers, onions, and a dab of butter are sealed in aluminum foil and tossed onto the grill. When the veggies are piping hot and tender, sprinkle with Cheddar cheese and serve.

This is a variation on baked potatoes that my parents taught me. If you love your potatoes with lots of sour cream and butter you'll love this one.

This is a hit around our house. If you like potatoes and mushrooms you will love this! The two are combined with a soupy sauce and fresh onion, then grilled in a foil pouch to perfection for a great taste sensation.

Creamy mashed potatoes with ranch seasoning in them. Grandma Jan's Thanksgiving dinner mashed potatoes. For a variation, try sprinkling your favorite shredded cheese over the top before baking.

Not your normal every day baked potato. Potatoes are cut into connected slices before being seasoned and baked. I leave the skin on (it gets crispy and yummy), but this can be made with them peeled also.

I wanted a different side dish one night, so I dressed up my usual scalloped potatoes with bacon, green onion and extra cheese. Microwaving speeds things up, but you can save even more time by preparing it a day early.

This is a version of Mashed Potatoes that my husband actually likes. You can use any type of potatoes and change the amounts of butter, sour cream, and milk to your taste. I like it with russets myself.

You can prepare this side dish in the morning, then put it in the oven later.
