Squash-Apple Bake
SUBMITTED BY:
Judith Hawes
"This is my mother-in-law's recipe, but I've made it so often I feel as though it's my own! Squash and apples are representative of New England in the fall, and taste even better when baked together. It's a wonderful Thanksgiving dish."

Oh, MAN! If I could give this more than 5 stars I would! I made it and by mistake doubled the amount of butter / sugar blend on top. (I started out doubling the recipe and then decided it wouldn't all fit in my pot!) I used a covered ceramic crock so I wanted everything to fit. I was skeptical when I put it in the oven as it looked a little weird - chunks of dry squash and apple with globs of oily sugar on top is what I thought. But it turned out SO GOOD, if a little wet! I spooned out the squash and apples and served them in a dish and my family inhaled them! It was sweet and a great texture, a nice presentation, and really lovely flavor. Intensely good and satisfying. I will be making this - in the correct proportions - for Christmas with the extended family and I am sure it will be a big hit!

I really liked the idea of this recipe, but it didn't turn out so well for me. I doubled the recipe to take to a potluck and there wasn't enough sauce to cover all the squash. I thought it would be ok if I cooked it covered with foil as someone else suggested, but the squash not completely submerged in the sauce was crunchy even after baking for longer than suggested and sitting covered with foil for 40 min before serving. Also, I've never made anything seasoned with ground mace. It is a really strong flavor. If you've had it before and liked it, you could make this recipe work for you. Most of the people at the potluck didn't care for it. If I made this again I would probably use cinnamon in place of the mace and triple the amount of sauce to ensure all the squash cooks properly.

I baked this for the recommended time and temp, but it didn't bake down well and the apples were drying out. I covered the dish and it baked down very well... I didn't have any mace so I substituted nutmeg and cloves. Not only did it make my house smell wonderful, it tasted awesome.

This recipe was wonderful. It's like dessert. I used Sucanat instead of brown sugar, and nutmeg instead of mace (they come from the same plant). I found that my "medium sized" butternut squash needed a 9" x 13" dish, and I used that with no problem. Be sure to peel the butternut squash well, or you'll have a slightly hard (but certainly edible) rind around all your rings.

Delicious! I substituted Splenda for 1/2 of the brown sugar and sprinkled about 1-2 Tbsp of chopped pecans over it.

Fabulous! I made this recipe exactly as described and it came out just like my mom's. No higher praise than that! Even my 3 year old loved it. Note: Due to the long cooking time, cut all the fruit into big chunks so as not to over bake.

I've been searching for an excellent version of this recipe for a while now. My grandmother, who is also from New England, used to make this on special occasions and holidays. I'm so glad I finally found a version of it that does her's justice. Thanks for the great recipe!

I varied by cutting both the squash and apples into medium size cubes and stirring them all together in the sauce. It looked great and tasted even better!
