This salad was so tasty and easy to make! I made it for dinner one night and had to stop myself from eating the whole thing! I made some substitutions which turned out wonderfully: instead of raspberry juice I used blackberry juice, instead of white wine vinegar I used red wine vinegar, and instead of mandarin oranges I used chopped dried apricots. Will definitely make this again!

This salad is light and tangy at the same time and tastes GREAT! A very flavorful bite of spring!
