Springtime Pea Salad

INGREDIENTS

  • 1 (10 ounce) package frozen peas, thawed
  • 2 celery ribs, thinly sliced
  • 1 cup small cauliflowerets
  • 3 green onions, thinly sliced
  • 1/2 cup Ranch salad dressing
  • 1/4 cup sour cream
  • 4 bacon strips, cooked and crumbled
  • 1/4 cup sunflower kernels

DIRECTIONS

  1. In a large bowl, combine peas, celery, cauliflower and onions. Combine dressing and sour cream; pour over salad and mix well. Cover and refrigerate for 1 hour. Just before serving, stir in bacon and sunflower kernels.

This is a great summertime salad that I have been making for years. The only difference in my recipe is that it calls for cashews in place of the sunflower seeds.

I have made this three times since March and everyone loves it! Another pot luck for Mother's Day and I am taking this recipe.

Wow - so yummy, so easy and kids loved it. I added shredded cheddar cheese. Will be making it alot. Thanks
