This recipe is an excellent way to create a unique gelatin salad using the abundance of rhubarb that everyone seems to have. With tons of rhubarb and an oven awaiting a repairman, this fit the bill. I made it for a Memorial Day picnic to go with BBQed ribs and it was a hit. Everyone, even my rhubarb hating child loved it. Unusual, extremely tasty salad.
