A quick and easy meal to assemble. I added a large chicken breast, which I chopped into small pieces, and about a cup of fined chopped mushrooms. I used medium shells in place of penne (because that's what I had on hand). I served it with salad and bread and everyone seemed to enjoy it. It might have been a bit better with more of a sauce.

Good simple, quick dish. I add chicken when I have it. Not sure why you would cook chicken and pasta together and give the recipe a bad review........ Reviewed: Jul. 29, 2009 Pasta didn't cook all the way without the chicken being overdone. I suggest cooking the pasta separately and then adding it in with the spinach. There wasn't much flavor to this dish.

No flavor unless you have a tomato bite. Sauce is way thin. Tastes like plain noodles with sundried tomatoes.

The family thought it was good, I thought it was blah. I added feta cheese since it had sort of a Mediterranean taste to it anyway, and that made it a little better.

We like this, but it's not our favorite spinach/pasta recipe on this site. I had sun-dried tomatoes in oil and chicken broth to use up, so I used those instead of the called for ingredients. I used less pasta, and would use more pine nuts if I make it again.

Really tasty with the following modifications: used 2 large cloves garlic, less pasta, sun-dried toms in oil vs dry, and chicken stock (from bouillon). This was very flavorful and light.

This was fantastic! VERY easy and quick. I didn't have pine nuts on hand, and didn't think we would miss them, but I think that nutty flavor would add a lot to the recipe. I had the sun dried tomatoes in oil from Costco, so I boiled them in broth to get some of the oil off and then diced. I added about 3/4 of the broth to the spinach mixture, then added the noodles and let simmer for about 3-4 minutes and this was perfect. The heat from the pepper flakes and the other flavors co-mingle perfectly!!
