It really was fast and easy and yummy. I used a regular skillet and only fit about 2.5 sliced potatoes and maybe 4 or 5 eggs worth so in the end it made two frittatas!

A family favorite! However, I like seasoning and I seasoned the potatoes with season salt, garlic black pepper, parsley and paprika.

Delicious, but it took at least 10 minutes on 3-4 for the eggs to firm up. If your family is super-hungry, might want to give them a 45 minute estimate instead of a 30 minute.
