I loved the idea behind this recipe, but because I did not follow it exactly, I am rating it only four stars. I did not use red onion (I used yellow, and may use less than 1/4 next time), and I also used sunflower seeds instead of pine nuts. I also cut the oil in half and used a bit more balsamic vinegar. It's a great vegetarian recipe that can easily be veganized, with either mock cheese or with the addition of a bit of nutritional yeast (when served) for that nutty flavour. I was surprised at how much this recipe yielded. I have been eating this at lunch and dinner for four days and I just ran out (and I ate about half of this).
