Very good! I used fresh basil and added tomatoes. We took it on a wine tasting picnic and it was a hit! Nice change from the typical pasta salad.

Good recipe. I shredded spinach in food processor & is much prettier-makes orzo appear green. Personally, you can use less than 1/2 the spinach & still tastes & looks the same w/o being so "soggy" or tough on your stomach.

Delicious. This recipe makes a ton though so next time I will cut it in half, if not thirds.

Wow! Be sure to let this salad chill for 8 hours before serving. It makes all the difference in the blending of flavors. My only changes were to add halved Kalmata olives and to toast the pine nuts. I was also a couple of tablespoons short on the balsamic vinegar, so I added garlic vinegar to make up the difference. This was really a wonderful dish!

YUM! I made this last night and followed the recipe to the letter. Everyone loved it and there is very little leftover for today. I think I'll add some rinsed garbanzo beans and halved grape tomatoes to stretch out the little I have left. I'll definitely be making this again!

My family loves this recipe! But I substitute a sharp white cheddar for the feta.

Great recipe. I always receive compliments and requests for this recipe each time I make it. Best when made the night before. I don't add all of the olive oil when first making it. I toss with some more vinegar and the remaining olive oil right before serving. I add grade tomatoes halved and toast the pine nuts as well.

The first time I made this, I stuck true to the recipe. It was delish, but I thought next time I'd only use 2/3 the orzo. When next time rolled around, I took it to work for a "team food day." EVERYONE loved it. Also, I thought my portion reduction of orzo was perfect. Afterward I was sad because there were NO leftovers. I won't make it for work again though because some of the ingredients make it pricey to serve to a big group of people. Super super yummy yummy yummy!!! Thumbs up!

Was looking for something I could carry to work for lunch. This filled the bill perfectly when paired with some tomatoes, berries, a ginger snap cookie, and sparkling water. What a wonderful lunch.

I used farfalle instead of orzo and since my husband does not care for feta, I substituted with a mixture of provolone and mozzarella cheeses. I also added grated Romano, salt, garlic powder and parsley. I toasted the pine nuts for added flavor.

I'm usually not a fan of traditional pasta salads, but this turned out to be a great side for a dinner I made for my boss. As per other suggestions, I added the spinach just before serving and used a balsamic vinaigrette (I made Good Seasons) for the dressing. It went really well with "Swordfish with Citrus Pesto" (Giada's recipe on Food Network), and a basic tomato salad (tomato, onion, basil, olive oil). I also substituted blue cheese to keep with the Italian theme, and I just loved the taste.

Excellent salad. This will be the salad I bring to picnics. Easy to make and easy to serve. I think it would also be good with some grilled shrimp or chicken tossed in.

I have been buying a salad similar to this at Whole Foods and Wild Oats for nearly $10.00 a pound. I was thrilled to find this recipe. I added some kalamata olives, otherwise stuck true to the recipe. Love it - Thanks!

This was delicious!!! I cut the recipe down to 4 servings, then I just drizzled some olive oil on the salad, but measured 1/4 c for the vinegar. I added tomatoes. Thank you for the great recipe! So delicious!

Wow. I'm not sure what I did wrong, but didn't like this at all. I think I did it as read, so I am surprised that it was such a hit with everyone else. to me, too much orzo to ratio of veggies. thanks anyway.
