Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a 10-inch pie plate.
  2. Press spinach in an even, compact layer into the bottom of the prepared pie plate.
  3. Beat milk, ham, eggs, baking mix, onion, Cheddar cheese, and Monterey Jack cheese together in a bowl; pour over the spinach layer.
  4. Bake in preheated oven until quiche is set in the middle, 35 to 40 minutes.

I followed the recipe to a T and it was a hit! Once I got home, didn't have any leftover ham so just added chopped up mushrooms, peppers, zucchini, etc and it was just as delicious as a veggie quiche ~ the recipe is definitely a keeper!

This was amazing! Normally when I make quiche there is always too much filling, but with this recipe the amount is perfect. I've made this twice now, and the second time I doubled the recipe the and froze one quiche for later. Gave the frozen one to a friend who said it was delicious and not too runny at all! :-) I used leftover Christmas ham, and the second time I made this recipe I did not have as many onions so I used green peppers in addition and it still tasted wonderful!

This was easy and fabulous! My husband LOVED it! Perfect recipe for a first time quiche maker like me!

Really tasty. I didn't have Monterey Jack so I used Mozzarella and Cheddar. Other than that I followed the recipe to a T. My husband really liked it and went back for seconds and claimed the rest for the next mornings breakfast. Will be making again.
