Great recipe. 4 stars as is but with a slight tweak it can be 5. I used diced fresh tomato, feta and light sprinkle of parm in filling after removing from heat. We don't care for mushrooms so I left them out. I also added a tbsp or 2 of cream after adding spinach back in w/garlic & onion. Used thin sliced cutlets pounded just a little to even them out. I always season my chicken with S&P and garlic powder regardless if the recipe calls for it or not so you can taste the chicken IMO. Also, to cut fat, I find that if you spray butter flavor Pam on top, it works just as well as butter or olive oil and taste good too.

This was great, my family really enjoyed it. I did add more spices than required and included cheddar cheese inside the spinach mix, but otherwise I followed the receipe as written. I had extra spinach filling left over and that was yummy along side the chicken. Thanks

I didn't care much for this... I did give it three stars for healthy. I think there was something about the texture of the spinach that came across as slimy to me and then the chicken once rolled up around the spinach seemed quite thick to be done in only 20-25 min. I took mine out at 22 min. and was kinda grossed out because it was still rubbery. I cooked another 6 min. I think initially 30 minutes is required. Needs some jazzing up imo!

I chose to add 2 oz. of cream cheese to make a more creamy spinach stuffing. It added a little extra flavor, and it turned out really well.

I purchased mozzarella balls and sliced them thin. I layered them on top of the spinach mixture before rolling up the chicken. DELISH!!! :-)

This recipe has a beautiful presentation, and it tastes as good as it looks with the benefit of being healthy. I agree with other uses, add some extra garlic, and a bit of chopped tomato. It is one of those dishes that looks like you took much more time than you really did. It would be great for guests. I have had this one for a while, and it's a keeper in our home.

We didn't really care for the spinach filling. We love spinach in recipes, but the flavor and texture didn't meld well with us. This is only our preference, I won't be making it again.
