I only changed one thing...I used parmesan cheese instead of feta. This was literally the best chicken I have ever had and my boyfriend agreed!

Delicious - I stuffed the chicken with fresh spinach, sundried tomato pesto, and laughing cow swiss cheese (light). Then cooked stove top with 3/4 cup of chicken broth and 1 cup of mushrooms with a squeeze of lemon. About 10-12 minutes. So delicious, tender, and flavorful.

Instead of stuffing the chicken I cut it up into smaller pieces and then just place the spinach & cheese mixture on top & finally the bacon. I usually cut the bacon up too because our six kids all want some. If bacon is not cooked enough for your liking, just broil for a few minutes at the end. Sometimes I have to drain some of the juices off at the end depending on the spinach and bacon I am using. No big deal, just tip slightly over the sink. It is so easy and so good-- I love when the kids actually want to eat spinach :). Perfect for a pot luck too when cut up instead of stuffing the breasts. I always come home with an empty dish.

Very tasty! I precooked the bacon a little bit since I like it a little crispy. I also browned the chicken really quickly before stuffing since I like the flavor. The feta mixed in very well and was not overpowering at all. Great recipe!

I made this recipe without the bacon. It was pretty good, but I felt it was missing something. There wasn't enough flavor for me. I felt like the flavor of the feta was lost after baking it?

Cram more spinach than the recipe calls for; you'll be glad you did! I was low on mayonnaise, so I used some sour cream--awesome!

I started by marinading the chicken breasts in a greek dressing for a couple of hours. I didn't butterfly the breasts, but created a pocket in which to place the stuffing. This way it bakes into the chicken and doesn't ooze out the sides. To the filling, I added 1/4 tsp. fresh ground pepper, chopped sun-dried tomatoes, added a bit more feta and about 1 T. of chopped greek oregano to the rest of the ingredients but omitted the bacon all together. I baked them in the oven as I didn't want the grill flavor. At the end of the cooking cycle, I placed a couple teaspoons of chopped greek olives then let them sit in the oven for about 5 more minutes.

WOW! This is GOOD! I changed up the method a bit cause I wanted to use fresh spinach... I cooked the bacon about halfway in a frying pan and then sauteed the spinach in the grease, removed from heat and mixed in the other ingredients straight into the pan. Some had mentioned that the chicken itself was a little bland and I don't like plain chicken, so I marinated it in Newman's Oil & Vinegar salad dressing cause I thought the flavor of it would go well (and it did!). Let it soak for about an hour- wouldn't let it go much longer though cause the vinegar starts to break the chicken down, but 1 hour just perfectly tenderized and flavored the chicken. So anyhow, other than that, did as directed and the outcome was DE-LISH!

My daughter cannot stand spinach, however she devoured this within seconds and asked for seconds. I used turkey bacon instead of regular bacon, other than that I left the recipe as is!!

I mixed equal parts light mayo with fat free sour cream and added some fennel. Great way to hide vegetables. It will definitely stay in our recipe list.
