These were easy to make and turned out great. I only had fresh spinach on hand, so I just went ahead and chopped that (I used about 4 oz, which turned out to be plenty). My bacon was a bit rubbery on the bottom, so I turned the breasts over just before they were done cooking and broiled the bottoms for 5 minutes or so. I also sauteed the spinach I had leftover and served that with some jasmine rice. Not too shabby I must say, not too shabby at all.

Loved this recipe...but I did make some changes in it. I didn't wrap the chicken in bacon I also thought it would make them too greasy so I put bacon in the stuffing mix instead. Cut into small pieces. I also added some scallions, mushrooms and olive oil. For the tops of the chicken I made and coating out of rosemary, basil, tyme, pepper to taste, tbl sppon of butter and olive oil and poured over chicken...all I have to say is yum :)

Fabulous! I made this last night for my girlfriend and I, and neither of us could believe just how good it turned out. Soo much flavor. The only change I made was using fresh spinach, and using 2 strip of bacon on each chicken breast to hold in the stuffing better. Thank you for sharing such a wonderful recipe.

This was a great dish!! We don't like feta so we used cream cheese in its place and it made it very creamy and tasty. After cooking covered for the hour, we took off the cover and let it cook uncovered for about 5-8 minutes to cook the bacon thoroughly. We will have this again and again. Served over rice pilaf and what a meal it was!! Thanks for sharing!!!

I have been making this recipe for several years and i absolutely LOVE it!!! The bacon does tend to be a little "soggy" so i broil it the last five minutes or so and turn them over so the other side gets crispy as well. I have also tried it using fat free sour cream instead of mayo and that way is DELICIOUS too. Sometimes i also add chopped sun dried tomatoes to the spinach mixture. This is a MUST TRY!!

My wife and I enjoyed this tonight. The only change that I made as suggested by others is that I uncovered the baking dish for the last 20 minutes and put on the broiler for the last 5 minutes. It came out very moist and tasty. The bacon adds great flavor. This recipe is a keeper and worth considering for a dinner party.

My husband says this is a keeper We fixed this lastnight and we were both very happy with the outcome of this dish. We cut the ingredints down to just 2 people . We served it with a garden salad with feta cheese and baked patatoe

This dish was absolutely delicious!! I made it for 18 guests, which included some children, and they all loved it. I covered the chicken with foil while it was cooking. When there was about 10 minutes left, I took off the foil and put the chicken under the broiler to brown a bit. The chicken made it's own sauce in the pan which I spooned on before serving. I don't know if the spinach wasn't drained enough or the foil helped create the sauce but it wasn't dry at all. I had to email the recipe to most of my adult guests because they loved it so much!

This was amazing. I used finely chopped Spinach because that's what I had on hand. I added a little onion powder to the mix and freshly ground pepper on the chicken. I also used the cooking suggestion of a previous reviewer bake 350 covered for 20min, uncovered for 20 and broil for 5. It came out perfect. This recipe will definitely be one that I will use a lot.

For those who said the chicken breast was dry. Before stuffing them. Try brining the breasts overnight and they will be moist. When cooked through, to brown and crisp up the bacon use the broiler for a minute or two.

Hello ,This is very good .I cooked thi for my girlfriend and she loved it .Now every time I come home I have to cook it . getting ready to make 12 of them to put in freezer and have for later .I took the jucies and made gravey to pour over .VERY GOOD !!!!

I make this with low fat yogurt instead of mayo plus extra garlic, chopped onion and sundried tomatos added to the mixture. Instead of wrapping with bacon, I lay prociutto or pancetta on top of the chicken as it bakes. I've made this 3 times and my fiance loves it. It's a surprisingly quick and tasty dish and goes great with steamed veggies. I'll be using this dish to impress company, too. ^_^

Pretty good--I definitely tweaked it to make it a bit healthier though. I used greek yogurt instead of mayo and added red pepper flakes to give it a kick. I also quartered some mushrooms, surrounded the chicken with them in a casserole dish, and added the remaining spinach mixture on top of the mushrooms. Based on previous reviews, I also used proscuitto instead of bacon.

I prefer simply dipping the stuffed chicken in egg white and breading with Italian bread crumbs before baking. Adding crumbled bacon to the filling is fine, but it's no good on top. All of the prepping necessary to make the bacon look and taste appealing is not worth it. Simply cooking the bacon and adding it to the filling is much easier and more successful. Flavored feta is also a nice touch.
