this was my 2nd time making it. i added onions to the spinach mix, and substituted miracle whip for mayo. used fresh spinach as well. i used turkey bacon for the top and i don't think it came out as crunchy as i would have liked. i agree with others though- the chicken on the outside was rather dry so next time i'll brush some olive oil or add a few more herbs. regardless, my husband still likes this recipe a lot.

I thought this was delicious. Even my boyfriend, who is not a cooked spinach fan enjoyed his. I made one with a breast and one with a thigh, and I found the thigh to be much more tender and flavorful. It really soaked up more of the flavor.

Super yummy! I am making this again. Make sure to create pouches for your stuffing so the breasts stay nice and moist. I fallowed the directions exactly except for maybe adding some salt and pepper on the outside. Just loved this recipe.

This recipe is great. I also added canned mushrooms that were drained. I ended up with leftover filling so decided to put it in some crescent rolls. They were wonderful. Makes a great appetizer.

Excellent! It was so moist and flavorful! my adaptations: stuffing: 1/2 package of frozen spinach, about 5 cloves of diced garlic, two fresh garden tomatoes, 4 oz of feta, about 1/3 cup mayo- more chopped garlic and olive oil dripped over breasts. no bacon. so good! thanks!

This was a very good recipe. You must be a bacon lover in order to appreciate the flavor. My bf loved it (and loves the taste of bacon), I did not LOVE it but thought it was very good (Iam not a bacon lover). The chicken cooks in bacon fat and sucks in all the bacon flavor.

A pleasant change from a normal chicken breast. I made a few substitutions, to cut a few calories. I only used about 1 tbsp of mayonaise. I also added about 2 tbsp of greek salad dressing. I mixed the mayonaise, salad dressing, sliced fresh spinach, feta and garlic in a bowl. I ommited the bacon all together. I sliced large pockets into each breast (I did 2) and stuffed them with the mixture. I seasoned the outside of the breasts with S&P and a shot of PAM spray (so it would brown a bit). Served with Penne, in a sundried tomato alfredo sauce and roasted brussel sprouts. Yum!

Wow! My husband and I absolutely loved this. I'd always thought stuffing chicken breasts would be tough but it was so easy! I used fresh spinach, microwaved briefly and then chopped coursly. I will cut down on the mayo a bit next time. My husband didn't want garlic in his and boy did he miss out. Wrapping it in a bacon is a must! When serving I spooned a bit of the sauce in the pan on top of each one. This is a keeper and a company meal! Thanks.

Great chicken...I took the suggestions of not using the bacon. I coated lightly with flour and browned in EVOO and butter and then baked.
