A pleasant change from a normal chicken breast.
I made a few substitutions, to cut a few calories. I only used about 1 tbsp of mayonaise. I also added about 2 tbsp of greek salad dressing. I mixed the mayonaise, salad dressing, sliced fresh spinach, feta and garlic in a bowl. I ommited the bacon all together. I sliced large pockets into each breast (I did 2) and stuffed them with the mixture. I seasoned the outside of the breasts with S&P and a shot of PAM spray (so it would brown a bit). Served with Penne, in a sundried tomato alfredo sauce and roasted brussel sprouts. Yum!
