yum. I partially cooked the bacon, as I prefer mine a little crisper when baked. Set aside bacon, then wilt spinach in about 1 tsp of the bacon grease for more flavour and higher calorie boost. Also a couple of sundried tomatoes to filling can be nice if you use feta

Delicious and perfect for company, but you can cut the amount of filling you need to make in half. You end up with a lot of wasted filling otherwise.

This chicken was good and will probably make it again. I have made a stuffed chicken breast before with ricotta cheese and more of an italian flare. I used frozen creamed spinach with sour cream, garlic and mozzarella and parmesean cheeses. I did cook my bacon a little as suggested by others so when placed in the oven would be crispy. My husband really liked it as well.

OMG this is the best! i added american cheese on the chicken and put sour cream with the spinch and onions then wraped the chicken with MAPLE BACON MAKES THIS AWESOME!!!! my husband love this he asked me to make it every week

I didnt have any of the Jack Cheese on hand, so I tried Marbled Cheddar instead, this worked well. I also omitted the bacon and used a premixed powdered Carbonerra sauce with the sour cream and cheese.

Wonderful dish! My boyfriend and I were both very pleased when we put this together last-minute. The only reason it was not 5 stars.... You should try to bake this on a tray inside a dish or something, so it doesn't cook in a 1/2 inch of bacon fat like mine did (and I would have liked the bacon crispy all the way around the chicken!) Also really do be careful if you decide to nuke fresh spinach - keep a constant eye on it so no pieces decide to dry out on ya! Next time I will be using a lot more spinach than I originally did, and maybe use feta cheese as well. What a great recipe, however, I will be keeping this for future dinners!

This recipe was ok. its not what its all cracked up to be. Id probably make it again but i wouldn't put it in my "FAVORITE" Recipe binder...but its ok. Just don't have high hopes for this recipe.

Like some other reviewers, i found this recipe to be a very nice presentation but a little bland initially. but interestingly, the leftovers were much better...no doubt due to the flavors having a chance to mingle. i really liked this recipe overall and want to experiment with it with some additional seasoning or perhaps a sauce that will compliment it over a bed of rice.

I really like this. I half way cooked the bacon like others suggested and it tunred out great. The only thing I might do differently is add a little more flavor to the filling.

OMG!!! My hubby and I thought this dish was outstanding. I followed the recipe to the letter with the exception of sprinkling seasoning salt, garlic powder and pepper over the top of the chicken prior to adding the bacon. The bacon cooked perfectly. I used thin sliced bacon so I think that helped in it making sure it was crispy. I will definitely make this again.

These turned out very well! They really had great flavor... spinach, bacon, and chicken work so well together. I added fresh, chopped mushrooms to the spinach mixture. Instead of nuking the spinach, I sauteed it, along with the garlic and mushrooms, in a bit of olive oil. Great dish, thank you :)

I ended up taking frozen chopped spinach and sauteeing it with butter and some garlic. I then mixed it with monterey jack cheese and sour cream. I also added seasoning to the chicken after they were rolled up. It cooked for 35 min with an extra 5 min of broiling, but in the future, I would probably reduce to 30 min so it doesn't dry out. Great presentation, but I think the filling needs a bit more work, especially as written.

The filling tasted great! I ate the left over filling with crackers as a dip and it was wonderful. However, when I baked it it was too thin and ran out of the chicken, it wasn't creamy inside like I had hoped. Also, it took a long time to bake the chicken since it was so thick. I made this again, using my favorite method of pounding the chicken and pan frying with cooking spray (super simple) then I just spooned the filling over and crumbled on the bacon. Awesome! It tasted great and it was really simple and fast!
