Delicious! I marinated the chicken in buttermilk after flattening them out. I used a lot of the suggestions of others (partially cooking the bacon, added onion to the spinach mixture as well as a little chive 'n onion cream cheese). Very moist and used a little salt in the marinade or chicken would have been very bland.

On another note...other reviews are giving this recipe 5 stars with all their changes. This isn't about 'lets see who can change someones recipe'. If you made so many modifications, then the recipe becomes your's, not the original submitters. Make it and rate it without all the add hoopla people!!

I used frozen spinich instead of fresh, think I used too much. Next time I will use more cheese and sour cream and less spinich. The spinich was too overpowering for my taste but my husband liked it.

This is absolutely delicious! I made this once with the sour cream and just made it again tonight but didn't have any sour cream so I just mixed the garlic, spinach, and cheese together and I also used turkey breasts instead of chicken....very very tastey. My hubby INHALED it! I'll continue to make this dish.

Some reviews found the chicken bland and I think the secret to that is add 1tsp salt to the mix or rub into chicken, add cayenne pepper as well. My hubby loved this one even though I over cooked it. It still came out great. Used butter milk to soak, and cook bacon a little before wrapping, but it shrinks so harder to wrap.

This was wonderful! I follwed the advice of others and partially cooked the bacon first and sprinkled the chicken with paprika. I wanted to use up some plain yoghurt so substituted that in for sour cream and it was still delicious. I didn't bother with marinating and the chicken still came out nice and tender. Like others have said, I had a little extra of the spinach stuffing left over. I fried up an onion and a couple of cloves of garlic and threw the extra filling in the pan with those and a can of sliced mushrooms and a touch of sour cream. I used this as a sauce for pasta to eat along side the chicken and steamed some asparagus....DEEEEEEELISH!

This recipe is amazing! I changed a few things. Instead of bacon I used the remaining spinach mixture and added it to the top for the last 5-10 min. It was so good!

This recipe is not only quite tasty but VERY easy to make as well. I did have a few variations. First, I added a little cheddar and spiced up the spinach stuffing by adding garlic salt and a dash of cayenne pepper. I also used extra thick pepper crusted bacon which I cooked for 3 min in the microwave before wrapping the chicken. Finally, I sprinkled some paprika over the chicked right before placing in the oven. The chicken turned out so good I ate 2 pieces!

Some modifications: I marinated the chicken in buttermilk, rolled it in a thyme/parmasean mixture before stuffing, and substituted dill Harvati cheese in the spinach. Only had room for one piece of bacon around each roll, but the outcome was superb! The boyfriend absolutely loved this. Will definitely make again.

We chose to grill this, which gave it wonderful taste. I think it would have been better if the bacon was cooked first, then cut up and added to the stuffing. The bacon on the outside was a little overwhelming-very rich.

Since I'm dieting I substituted: 1 pack of chopped frozen spinach less than a hand full low fat shredded pepperjack cheese Minced garlic 2 skinless, boneless chicken thighs 4 slices turkey bacon Island Mango Marinade The taste of the dish is phenomenal. Add a size of corn and eat up. After eating you will not feel heavy or stuck. I highly recommend this dish to everyone!!!

Made this and found it not to be the flavor explosion I expected it was bland HOWEVER the leftovers the next day WOW that is when the flavor explosion came and it was wonderful! I will make this again only to let is sit a day before serving.
