INGREDIENTS
1/4 cup vegetable oil
2 tablespoons red wine vinegar or cider vinegar
1 teaspoon sugar
1 teaspoon finely chopped onion
1 teaspoon finely chopped green pepper
1 teaspoon minced fresh parsley
1 teaspoon ketchup
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/4 teaspoon paprika
2 cups torn fresh spinach
1 hard-cooked egg, sliced
3 bacon strips, cooked and crumbled

DIRECTIONS
In a jar with a tight-fitting lid, combine the first 10 ingredients; shake well. Divide spinach between two serving bowls or plates; top with egg and bacon. Drizzle with dressing. Serve immediately.

I'm so happy to be the first to review your recipe Gail and I'm even happier to tell you how much I enjoyed it. Served it for company and was told that I had better hold on to this! The only thing I did differently was to warm the dressing. So good and thanks a bunch!

This salad was excellent! I used about 8 cups of baby spinach, 4 hard-boiled eggs and a couple T. of bacon bits. I used the same amount of dressing here, except I used extra virgin olive oil instead of vegetable oil, I left out the minced onion and green pepper, and I used 1 t. dried parsley. I'll be making this again!

We've made this three times in the last three days, and it is outstanding. I left out the onion and green pepper and used dried parsley (1/2 tsp.) and olive oil. I have made it with and without the egg, and it's good both ways. I hesitated about this recipe because I thought I might not like the dressing, but it was just perfect for the spinach and bacon combination. Thanks for a great recipe!

I just finished eating this salad (the empty bowl is sitting here right in front of me) and thought it was excellent!! It takes a lot for me to give something five stars but I think that this salad is so simple yet so good and healthy (something that is very important to me). It is made with ingredients I usually have on hand so that's a plus as well. I did everything as called for except used bacon bits instead, used one whole egg for serving (I was eating this salad as a meal on its own), and about double the green pepper asked for as I cut up too much and did not want to waste the rest. Next time, the only change I might make is to use olive oil instead for the health benefits - the dressing definitely makes this recipe. I have put this recipe in my recipe box and will go back to it many times over!! I can't wait to make it for guests. Thank you for sharing! :)

I made this to take to a Christmas dinner. Several people complimented it. I however, felt something was a bit off. I'll probably try it again just to see if I did something wrong.
