First quiche I've ever done and it came out very yummy. Everyone in the house loved it! I did lessen the butter to 1/4 cup, mindful of the feedback that the quiche recipe as it stood might come out too oily. I also used fresh spinach which I needed to wilt a batch at a time when i cooked it. I used Kiseo, a native buffalo cheese here in the Philippines, in place of feta, and cheddar cheese. Because the native buffalo cheese gave off some liquid, I removed most of that from the spinach mixture before I placed it in the pie crust. I didn't salt the milk and egg mixture anymore because the spinach mixture was already salty enough. The quiche came out really lovely. Thank you!
