This was really good. Like some other reviewers, I used olive oil for the butter for less fat. I also used fresh mushrooms and fresh spinach. I think I should have drained the mixture before adding to the egg mixture since the fresh ingredients seemed to have a lot of liquid after cooking. Great change from the ordinary ham and swiss quiche!

I used 1/2 the amount of butter as suggested and substituted fat free 1/2 and 1/2 for the milk.Didn't have mushrooms so I just left it out.Also, after mixing the liquids ,I just added the spinach mix to the bowl ,mixed well and dumped the whole thing into a well buttered glass pie plate. baked as directed.Fantastic! no soggy crust for the leftovers!

The recipe made more than my deep dish would hold, I ended up using two crusts and it filled them both about 3/4 of the ways on each. The filling was great and hearty. We used it as our Meatless Monday meal, and Hubby even liked it!

Cutting down the butter to 2 TBS with a little bit of olive oil worked great for me. It made 2 quiches for me but I had to add 2 more eggs. My family absolutely loved this!

This quiche recipe was very easy and very delicioius. I am going to use the 4 egg, 1 cup of milk ratio to make other types of quiche. I can't wait.

My comfort food is quiche and when I have a rough day, it is what I crave. Just the smell of this quiche cooking is enough to make me smile. Like other reviewers, I also reduced the amount of butter. I used a cream cheese instead of feta (feta is hard to find where I live in the world) and it was delicious. I also made my own pastry as pre-packaged pie crust is not an option here either. It may have been my gas powered stove that increased the cooking time as my took longer than an hour to cook properly. I cut out the mushrooms and added red pepper for color. The end product was delicious and I know I will make it again.

This has way to much butter in it for my tastes. Next time will def 1/2 the butter at least. I used all eggs whites and (besides the butter) was good.

Love this recipe.However, I use fresh mushrooms & spinach. I saute them with the onions & garlic then drain off the excess liquid. I also use cream instead of milk & sometimes play around with different cheeses, but the basic recipe is very good.

I made this because I had to use up some spinach and some eggs. I didn't use mushrooms and used regular feta cheese instead of the herb and garlic. I put the mix in a muffin tin and cooked them for about 15 minutes. I added the cheese on top and cooked about another 5. They turned out amazing! Definatly a keeper!!
