This was excellent. I did not use the microwave except to melt the butter. I combined all in a saucepan and then poured in two layers over the raw potatoes. I added 1 tsp of dried mustard and 1 tsp of coriander and I used roasted red peppers.

Quite good for a quick meal accompaniement - probably needs more milk to make the sauce a bit runnier. Overall good probably better to make it the traditional way in the oven but OK for a microwave meal.

This was really easy to make and tasted wonderful. I'm always looking for new ways to use spinach. Substituted spelt flour (gluten-free), soy milk and cheese instead. Didn't add the bacon bits or pimentos. Although pimentos would be good...
