INGREDIENTS
1 medium onion, finely chopped
1/4 cup butter or margarine
3 (10 ounce) packages frozen spinach, thawed and drained
1/2 cup half-and-half cream
1/2 cup coarsely chopped pecans
1/3 cup dry bread crumbs
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/8 teaspoon pepper
TOPPING:
1/4 cup dry bread crumbs
2 tablespoons butter or margarine, melted

DIRECTIONS
In a skillet, saute onion in butter until tender. In a large bowl, combine onion, spinach, cream, pecans, bread crumbs, salt, nutmeg and pepper; mix well. Transfer to a greased 1-1/2-qt. baking dish. Combine topping ingredients; sprinkle over the spinach mixture. Bake, uncovered, at 350 degrees F for 30 minutes or until lightly browned.

Delicious! So simple to make, yet such a wonderful blend of flavors and textures. I was first served this dish at a family dinner party and knew that I had to have a copy of the recipe after the first taste.

A friend made this recipe several years ago, and the two of us ate 3/4 of it at one meal! I don't change a thing, except sometimes I don't even put the extra topping on. When cooking it just for myself I cut it down to 2 servings, and the recipe still works well. I have made it for a dinner party and it went over well, even with people who don't care for spinach. One reviewer suggested garlic; that would be a good addition.

This was easy to make but not extremely flavorful. I love spinach, but if I made this again I would add a good amount of garlic. I used cornbread stuffing mix instead of plain breadcrumbs, but I still would have liked more seasonings.
