Wow are these great! I rolled out the sheets nice and thin, cut into circles and spooned a ricoota mixture onto them, folded, sealed and called it ravioli and they were seriously the best ravioli I have ever had. the noodle is so delicate and tender and both my kids gobbled up the raviolis. I never mentioned they were green because of the spinach and they didn't seem to notice there was a vegetable in there! Yummy! Thanks so much!

These were so easy and absolutely fabulous! There were no leftovers. My almost-3 year old cleaned his plate and my 1 yr old had seconds. I didn't have the best of luck with the jellyroll method, so I rolled the dough out thin and used a pizza cutter to quickly slice out the noodles. Worked perfectly. Two thumbs up!

This is a really great recipe! You can also substitute the spinach for almost any other pureed vegetable, and it works so well! We will never buy pasta again.

Wow, this was by far my best attempt at making homemade pasta! I used fresh spinach (since that's what I had) and made sure to process it until the spinach was down to itty bitty pieces. It took some doing to get all the flour incorporated into the dough and I ended up using a little extra flour as the dough was a bit sticky. I found that trying to do the jelly roll thing and then cut the pasta just wasn't going to work, so I tried using my kitchen scissors and that worked great. After I cut each noodle, I rolled it back out again to make it a lot thinner than I could get a sheet of dough. My noodles came out about an inch wide and about 3-5 inches long. They only took about 5 minutes to cook (the 15-20 minutes seemed awful long to me for fresh pasta unless it was really, really thick and I was trying to get mine fairly thin). This recipe would make plenty to feed four hungry adults. I only cooked about half of the pasta (as it looked like a lot) to feed myself, my husband, my 3 year old, and 20 month old. I made an easy alfredo recipe from this site and added some shrimp to top it all off. Very, very yummy! It was rather time consuming to get the noodles cut up the way I wanted them (I think I'm going to get a pasta maker machine at some point to make this easier) but it was worth it! The noodles were great and didn't taste a ton like spinach (which was good for the kids) and I'll definitely make this again!

What a great recipe - definitely the quickest & easiest homemade pasta I have ever made! I usually prepare pasta recipes that contain semolina flour. In this case, I decided to use 1/2 all purpose flour & 1/2 semolina flour which worked out perfectly. This recipe was a hit!

Amazing!!! Didn't have an overwhelming spinach taste, which I was afraid of. I didn't wait that long for the dough to rest and I didn't wait for it to dry out. Husband really liked it and both the kids ate a ton too! I had a little trouble with pureeing the spinach but it didn't seam to be a problem except when cutting the noodles, I needed a sharper knife probably.

I love this recipe. I tried it once because I had left over spinach and have made it several times since. It is pretty easy, but the dough is definitely sticky and it is pretty messy to make.

I didn't like the texture because I'm so used to boxed pastas. My husband, who loves fresh made pasta, LOVED IT! Served with homemade alfredo sauce.

Absolutely delicious! Works great with alfredo sauce. If you are using a pasta maker, it is much quicker and easier to make.

Super easy to make! I haven't eaten them yet, but prepared three batches for my freezer. My tip: make sure and roll these out on a VERY well-floured surface so that when you roll them up and they're "resting" they don't stick together!

I subbed fresh spinach for the frozen, but other than that made the noodles as written. Delicious! I made a double batch and froze half. For freezing, make each noodle into a little "nest", then freeze for an hour or two on a cookie sheet before transferring into a Ziploc. I served them with a parmesan sauce with ham and peas in it. I would highly recommend giving this recipe a try.

This has to be good when all 3 of my kids eat 3 helpings. I thought that the spinach flavor was strong but my family enjoyed it and it went well with homemade alfredo sauce and focaccia bread.

These were a real surprise. They weren't that difficult to make and even my 2 year old who refuses to eat spinach ate them. I will let them sit a while longer (maybe overnight) to really dry the noodles out next time.
