I made the following changes (I always tinker with recipes) and it was delicious:
- replaced chicken broth with veggie broth (made with Better Than Bouillon concentrate)
- doubled the carrots (2 medium carrots)
- added two medium potatoes, diced to 1/4"
- added a handful of chopped celery leaves
- used 10 oz. frozen chopped spinach (drop the block into the hot broth to melt)
- reduced butter to 1/4 cup
- used all milk, no cream
- a little less pepper and nutmeg
I also did not puree the whole thing, just a half cup of broth with the flour mixture so that it would mix in smoothly. I like the texture & color with the potatoes & carrots. Very satisfying. Would make a good sauce for pasta too.
