Great soup for a rainy day or for a lite lunch. For more flavor I added some dry chicken seasoning, and for more thickening I used boxed dried potatoes used for mashed potatoes (great for thickening soup and adding a potato flavor too). =)

I was rather pressed for time when I made this, so skipped a couple of the steps and it still turned out to be wonderful! I did not add the carrot (which I will next time) and I chopped the spinach and the onion rather small so that I did not have to blend the soup. I also forgot to add the nutmeg and I like the taste of nutmeg and spinach...

Put more carrots and spinach than it called for to get some more heft to the soup and used evaporated milk rather than cream because I had it on hand. It was fantastic!

This is not an bad soup, but seems to be lacking in something. Usually, I can read a recipe and guage what is missing, but not on this one. I added a little fresh italian parsley from my garden to give it a little texture. Maybe something spicy to give it a little bite? I'm not sure.

This soup had a good flavor once I added parmesan cheese and quite a bit of salt. Also, it was a little thinner than I expected. It would make a great spaghetti sauce.

I don't even like spinach but loved this soup. Made it for my hubby but I tasted it and wanted more. I did use a 10 oz package of frozen spinach and used a electric hand blender to puree it. Also upped the flour to 1/3 Cup. Great recipe.

I made the following changes (I always tinker with recipes) and it was delicious: - replaced chicken broth with veggie broth (made with Better Than Bouillon concentrate) - doubled the carrots (2 medium carrots) - added two medium potatoes, diced to 1/4" - added a handful of chopped celery leaves - used 10 oz. frozen chopped spinach (drop the block into the hot broth to melt) - reduced butter to 1/4 cup - used all milk, no cream - a little less pepper and nutmeg I also did not puree the whole thing, just a half cup of broth with the flour mixture so that it would mix in smoothly. I like the texture & color with the potatoes & carrots. Very satisfying. Would make a good sauce for pasta too.

Taste was excellent; exactly what I envisioned! Added chicken for a hardier meal. WARNING: the appearance is kind of an icky, pale green. This cause my husband to turn his nose up at it. But if you're a fan of spinach, this is a great recipe.

I thought this was really good, my husband loved it and so did my 3 year old and 1 year old. The only reason I didn't give it a 5 star is that I am not sure if it is worth getting so many pans dirty and it was a very thin soup so not filling and hearty. Definitely a pre meal soup. Very good flavor though, even better the next day.
