I should have used a larger pan. Didn't set up well, even though I cooked it on top of stove on low for 15 min and put in broiler for a few minutes. Too much hassle for me. Just as easy to just make an omelet or a quiche. I guess I could have baked it for 30 min too. Won't make it again. Sorry.

It was a hit for Father's Day brunch. Used half-and-half instead of milk. I didn't realize until I was halfway through the recipe that it only called for only HALF the box of frozen spinach...I wanted to use up the whole box, so I dumped it all in and added 2 more eggs and more half-and-half. After sauteeing the peppers and onions, I sprayed my 12" straight-sided skilled with Pam, then dumped in the egg mixture. I cooked it (covered) on stove for about half the recommended time...then got a call saying my guests would be late...so I removed it from the heat, preheated the oven, and when they arrived 10 minutes late, I put it in the oven (uncovered) for 5 minutes. PERFECT. Came out of the pan in beautiful wedges. The double spinach, extra eggs, a little extra cheese, but only single amount peppers & onions was the RIGHT combination. I did add chopped canadian bacon instead of chicken, but next time I think I will just leave meat out all together - we couldn't taste it at all.

This sounded good, but we really didn't care for it. I had difficulty getting mine out of the pan so it didn't look very pretty either. I did have to add more eggs though as there was barely any and it didn't even cover the bottom of the skillet.

I had a bunch of fresh spinach and was running out of recipes...and found this one. I tried it out - and it turned out beautifully!!! I did not have some of the ingredients, but used bacon bits (real ones) instead of chicken. I topped with sliced tomatoes and the kids ate it up!!!! I also brought to a Mom's luncheon and it was a HIT!!! I told them despite the taste, it is TOOO easy to make! This is a 'keeper!'

This is fantastic! I omitted the chicken and salt and substituted the mozzarella with feta. I also used fresh spinach because it's what I had on hand. Tasty!

I made this into portable snack for the kids dance show by pouring it into greased mini-muffin tins and baking at 350 until the "mini-fritattas" were puffed up and golden-about 10 minutes (but keep an eye on them). They were eaten in seconds!! Left out the peppers and chicken this time around, but will add them next time, when I make a full-size one!

This tasted wonderful. My husband, who isn't into spinach, enjoyed this as well. I used cheddar instead of mozzarella, cream instead of milk, 1/4 cup onion instead of 1/2 cup. It was my first time making a Frittata and the top didn't cook enough so I turned it into scrambled eggs. Next time I'll cook on medium low heat for 15 minutes like someone advised or I'll finish by putting it in the oven on broil to set the top.

I didn't have the exact ingredients on hand when I made this, but I took the author's suggestion and subbed other things. No red peppers and no chicken, but I put in bacon bits (the real bacon kind) and brought it to a pot luck where it was SCARFED despite being a tiny bit too salty (bacon, you know how it is). I'm making it for dinner right now.

I made this for dinner one night on a whim, first attempt at a frittata and I have to say I rate dishes on the husband test. It's not enough that he went back for seconds, but he wants to eat it again! I tweaked the recipe to what I had on hand, bacon and no peppers, it still came out great. The only thing I would say is this, beat the whites and yolks separatly, and mush it down to cook the eggs on top.

Great base recipe. I only had leftover ham and it was great with the veggies! I added another egg because it just looked like it needed another. My only tip is that it took at least 15 minutes to cook on medium low, covered. Can't rush a good thing! I served with salsa because we love spice. Thank you for the yummy breakfast recipe!
