I used reduced fat sour cream/mayonnaise. I made no other changes or substitutions. For me, I thought it had a little too much sour cream/mayonnaise. I'd like to make this again but I'd increase the spinach and water chestnuts. I think I'd add some garlic powder next time, too.

This is one of my favorites. I've had it at many potlucks. This was my first time making it. The first time I had lots of time and made sure the spinach was completely thawed and squeezed completely dry and it turned out perfect. The second time I was trying to hurry and didn't get all of the water out. The dip was a little runny. Definitely key to get as much water out of the spinach as possible. Other recipes say to heat the spinach to make it easier to drain. I haven't tried that but might next time.

I love this recipe. I got it from a friend about 20 years ago but lost it in my last move. I was so happy to find it here. Don't let the water chestnuts scare you. They just dd a nice crunch and freshness to the dip. I never have any leftover when I put this one out.

This is so easy and the water chestnuts add a lovely crunch. I love spinach some I have doubled the spinach and left the other ingredients the same and it still came out great.

I made this for thanksgiving dinner to hold my family over unitl dinner was ready. It was a very big hit. Almost too much so, everyone was getting full before the dinner was on the table. Will make again and I didn't change a thing.
