I Love this recipe. I did't have Mayonnaise this time so I used Miracle Whip, and I definitley don't reccomend it. I'm going to try to salvage it and make ham pinwheels in the morning with it I will let you know how that turns out. UPDATE: I ended up adding an additional cup of sour cream and about 2 more oz. of spinach, and it turned out great. Everyone said that they loved it.

WOW! This stuff is GOOD! I made no alterations to the ingredients other than use fat-free sour cream and low-fat Hellman's mayonnaise. I will definitely be using this over store bought ANY day! Thanks for the recipe!

This has got to be one of my all-time favorite appetizers. I serve mine in a bread bowl (rye if I can get it/make it) otherwise French bread works well too.

I have been making this recipe for about 12 years, and these are the changes/additions I 've made: To the existing recipe I add a 250 g brick of (only) Philly cream cheese, light, 2 - 3 cloves of garlic and about 1/2 cup of toasted slivered almonds. It's delish and always gets rave reviews!

I was short on water chestnuts and green onions so I subbed diced purple onion. It was perfect, had the onion flavor with the water chestnut type texture. My picky 7 year old loved it on cheese crackers.

Pretty good, the only thing I did differently was use minced onion. I thought at first it might be a little too creamy with not enough spinach, but it ended up being fine.

Delicious! Here is a tip: If you're buying bread from your grocery store's bakery to go with the dip, ask the baker behind the counter to slice it for you. It takes 5 seconds to put a loaf of French bread through their sandwich slicer, and you will get perfect bite-size pieces every time. It does not cost you anything extra, and it will save you time when you get home. :) The slices are great in a basket beside the dip.

Definitely use mayo and not Miracle Whip. I also prefer to use Knorr's Leek Recipe mix in lieu of the vegetable soup mix and then omit the green onions. I prefer to make the dip a day prior to my event so the flavors can mix overnight. The water chestnuts provide a nice crunch to the dip and is low-cal and filling. Delicious!

Good Stuff Maynard!! I always use Lite Sour Cream and Light Mayonaise(Best Foods Brand) and it comes out great. Can't taste the difference. I'm going to try the LEEK Soup mix next time. May even reduce the amount of mayonaise called for.
