INGREDIENTS
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
2 eggs, beaten
1/2 cup milk
1/2 cup cubed process cheese (Velveeta)
1 tablespoon chopped onion
1/2 teaspoon salt
1 cup soft bread crumbs
4 1/2 teaspoons butter or margarine, melted

DIRECTIONS
In a large bowl, combine the spinach, eggs, milk, cheese, onion and salt. Pour into a greased 1-qt. baking dish. Combine bread crumbs and butter; sprinkle over the top. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean.

I made some changes due to what I had on hand. I used shredded swiss cheese inplace of the process cheese. Also I did not have a 1 qt dish so I used 4 1/2 cup ramekin dishes (sprayed with Pam). To cut down the calories I used egg beaters, fat free milk and ICBINB Light. So far I have made this twice..very good!

Delicious!!! It was really yummy...sure didn't taste like vegetable. Everyone had seconds. I think it would be great even without the amount of butter called for - I think I'll just use 1-2 Tbsp next time.

My family usually does not like cooked spinach dishes, but I love them. I tried this, and everyone wanted second helpings. My husband said, "This is not bad for spinach", which is saying a lot. I will definitely make this again.

Loved it. Very simple and super tasty. I couldn't find block processed cheese so I used sliced processed cheese (about 6 slices) and just ripped them up. I will definitely be cooking this again. I did find because the spinach was very cold after defrosting it, the meal did need extra time in the oven as it wasn't hot enough or of course you could 'zap' it at the end in the microwave. A great side dish. t
