Spinach Crumb Casserole

INGREDIENTS

  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/2 cup cubed process cheese (Velveeta)
  • 1 tablespoon chopped onion
  • 1/2 teaspoon salt
  • 1 cup soft bread crumbs
  • 4 1/2 teaspoons butter or margarine, melted

DIRECTIONS

  1. In a large bowl, combine the spinach, eggs, milk, cheese, onion and salt. Pour into a greased 1-qt. baking dish. Combine bread crumbs and butter; sprinkle over the top. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean.
