Ingredients

  • 3/4 cup chopped onion
  • 2 tablespoons vegetable oil
  • 1 (10 ounce) package frozen chopped spinach, thawed
  • 1 cup uncooked long grain rice
  • 2 1/4 cups water
  • 2 medium tomatoes, diced
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  1. In a skillet, saute onion in oil until tender. Add the spinach, rice and water. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until rice is tender and water is absorbed. Stir in the tomatoes, salt and pepper; heat through.
