Ingredients

  • 1 pound ground beef
  • 1 (4.5 ounce) jar sliced mushrooms, drained
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 1/2 teaspoons dried oregano
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
  • 1 (10.75 ounce) can condensed cream of celery soup, undiluted
  • 1 cup sour cream
  • 1 cup uncooked long grain rice
  • 1 cup shredded mozzarella cheese

Directions

  1. In a skillet, brown beef; drain. Add mushroom, onion, garlic, oregano, salt and pepper. Add spinach, soup, sour cream and rice; mix well. Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with mozzarella cheese. Cover and bake at 350 degrees F for 45-50 minutes or until the rice is tender.
