Spinach-And-Berries Salad With Non-Fat Curry Dressing

6 ounces fresh spinach, torn in bite-sized pieces
1 cup thickly sliced strawberries
1 cup blueberries
1 small red onion, thinly sliced, pulled into rings
1/2 cup chopped pecans
Non-Fat Curry Dressing
2 tablespoons balsamic vinegar
2 tablespoons rice vinegar
4 teaspoons honey
1 teaspoon curry powder
2 teaspoons Dijon mustard
Salt, pepper to taste

DIRECTIONS
Wash and dry spinach. Whip together dressing. Add to spinach and toss lightly. Add berries, onion and pecans. Toss lightly.

This dressing was phenominal. I was so pleasantly surprised at how good it actually tasted. In lieu of honey, I used 4 T water and 3 pkg. Splenda. I'm sure that the recipe is even better as written, but I wanted to cut as many calories as possible. This was awesome.

I was very dubious about this but I decided to try it because it was so full of healthy ingredients. I was pleasantly surprised! The recipe turned out great and tasted delicious. What an unusual but clever combination! The dressing was probably my favourite part - so good I forgot it was non fat until I came back here to rate the recipe! I will serve this next time we have company.

A good salad, I used all balsamic vinegar, 2 teaspoons curry powder, toasted the pecans and used more blueberries, freshly picked from our local blueberry farm, to regenerate even more of those new brain cells :).

I thought this salad was absolutely delicious! The dressing really brought all of the other ingredients together. I substituted sliced almonds for the pecans to suit my own tastes. Great recipe!

I served this at a dinner party and got rave reviews. I added a little olive oil and splenda to the dressing. I love the combination of berries.

I love any salad with fruit...I regularly add nectarines to my salads...but this was such an interesting twist. The blueberry-strawberry-spinach combo was fantastic. By the way, hands down, this is the best 3 minute salad dressing I have ever tried. It is just fantastic. I can't wait to try it as a marinade.
