Ingredients

  • 2 cups Minute® Brown Rice, uncooked
  • 1 pound bulk turkey sausage
  • 1/2 cup chopped onion
  • 1 (10 ounce) can tomatoes with green chilies, undrained
  • 1 tablespoon chili powder
  • 1 cup shredded reduced-fat Monterey Jack cheese

Directions

  1. Prepare rice according to package directions; set aside.
  2. Crumble sausage into large skillet; cook until lightly browned. Stir occasionally, to break up sausage. Drain. Add onion; cook until tender. Stir in tomatoes, chili powder and rice. Simmer 2 minutes. Sprinkle with cheese.

  • Add a small can of corn with red and green bell peppers, drained and a can of beans (kidney, pinto or black), drained (rinsed) along with tomatoes, chili powder and rice. Garnish with chopped cilantro if desired.
