The whole family loves potatoes like this and I have been making them for several years. I don't measure ingredients usually but I coat the potatoes in oil and the seasoning. This can be done with any kind of seasoning pack. Ranch is my favorite.

I was having a Mexican dish and was looking for a side that complimented it without it being too fatty. This recipe was OK. The amount of seasoning that it calls for leaves the flavor very faint. I melted some butter and mixed in some additional taco seasoning and coated the potatoes with it and baked a few additional minutes. Before done baking, I sprinkled some cheese on them to let them melt. Afterwards, I topped them with salsa, sour cream and green onions. It had a bit of a Mexican flare (though not as great as I was hoping). All in all, it was a touch of something different and did complement my dish. Might make again in the future.

Well I definetly added to the ingredient list but they definetly receive 5 stars! I coated and tossed the potatoes with canola oil, add in hot taco seasoning (only enought to nicely season). I also added in a couple sliced green onions and some chopped green pepper. About 10 mins before they were done I added shredded marble cheese and then topped each plates serving with a dallop of light sour cream and hot salsa. Wow these were really fantastic!!

Simple and delicious. The kids love these potatoes. Try using vegetable oil instead of canola oil.
