INGREDIENTS
1/2 cup chopped onion
2 tablespoons olive or vegetable oil
2 cups chicken broth
1/4 cup dry lentils, rinsed
1 (16 ounce) can kidney beans, rinsed and drained
1 cup salsa
1 cup uncooked long grain rice
1 cup frozen corn
1 (2 ounce) jar diced pimientos, drained
1 teaspoon chili powder

DIRECTIONS
In a saucepan over medium heat, saute onion in oil until tender. Add broth and lentils; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer 20-25 minutes longer or until lentils and rice are tender.

Fast and easy, and reheats nicely, too! I used brown rice and omitted the lentils but they would be a nice addition, and used black beans this time. Added about a tsp. of cumin for extra flavor - could have used a bit more. I think I would like it even more with some extra veggies tossed in - maybe diced zucchini or carrots. But still a tasty dish that I will make again! Thanks for sharing!

I love this recipe and have been making a version of it for years. I like to add about 1/4 tsp. of cumin just because I like the taste and instead of kidney beans I use black beans. If I want to make this an entire meal I take 1/2 of a pound of hamburger and the onion first then follow the rest of the directions by adding broth and lentils.

This is really good! I had to change a few things - veggie broth because I'm vegetarian, I didn't have pimentos, and I omitted the chili powder (I don't think it needed it). Very tasty and substantial for a poor college student like me, it was very filling and there's a ton left over!

I thought this was very good and will add this to my rotation. It's a tasty main course just as it is. We had it with cornbread. yum. Good variation on beans and rice.

I had to add water with the rice and also threw in about 1 t. cumin. Other than that followed to a "T" Tasty and healthy!!!

it took a while for the rice to cook, but when it was finished it was delicious. i followed the suggestion to substitute black beans for pinto and to add cumin. i also eliminated the lentils and pimientos since i didn't have them on hand. thanks for a good rice recipe, better than most mexican restaurants!
