In this version, Chili Mac gets even closer to its roots with authentic Mexican ingredients like chorizo and poblano peppers. It's quick and easy -- a true one-pot meal. Serve in bowls, and garnish with small dollops of sour cream or a sprinkling of queso anejo.

This is a honey mustard glaze with black pepper for a little spice. You may decrease or omit the pepper if you don't want it so spicy. You can also decrease honey if it is to sweet for your taste.

I'm not sure why it's called lasagna, but it is very good. A beef and refried bean mixture is buried in melted cheeses. Try serving it for a New Years or Superbowl party.
