We really enjoyed this recipe, although I changed it a bit. I tripled the given spice mixture for 4 quite large breast halves and used fresh thyme and parsley (substituting tablespoons for teaspoons for all fresh herbs), along with jarred garlic instead of garlic powder. I made the spice mixture into a paste with about 2 T of lime juice. Instead of cooking it on the stovetop, I baked the chicken into a 9"x13" pan. I coated the pan with a tablespoon of olive oil, put in the spice-coated chicken, put about a T of butter in small chunks around the chicken, and put a center-slice of lime on each chicken breast. I covered it with foil and baked it at 350F for 10 minutes; then poured a mixture of a half a cup of chicken broth, 1 T lime juice, some paprika, garlic, crushed red pepper, black pepper, and onion powder mixed together over top of it. I baked the chicken for another 30 minutes and it came out wonderfully moist and delicious, with a lovely spicy but not hyper-hot taste. I do think I may add a bit more lime juice next time, but my husband and I both really enjoyed this. There was plenty of sauce left to dress our rice and veggies!

Very tasty and easy to make. The chicken was tender though I did have the cook it ten minutes longer than the recipe stated. Also, I used garlic cloves instead of powder with the butter and olive oil.

I'm not a big fan of big slabs of meat for dinner, but this was awesome. Very simple, but with unbelievable flavor! Great with pico de gallo, Mexican rice, and a little salad.

I'm always looking for tasty chicken recipes and this one is a keeper. The spice mix is very nice, it adds a lot of flavor without being overwhelming.

Giving 4 stars only because the spices definitely needed to be doubled (except for the salt). I actually used 5 chicken breasts instead of the called for of 4. And I was scrambling to put together the spice mixture to go on the other side of the breasts while the butter and olive oil were almost burning. Also I probably used more butter and olive oil. Otherwise, the flavor was perfect! It all compliments each other well. I dont think it was spice though but I like it HOT! And I love anything with lime. I made Cilantro Lime Rice to go with.

I skipped the thyme and parsley,adn kept only the spicy ingredients. It didn't turn out too spicy, though. Great recipe, for a different taste of chicken. I served it with lemon risotto.

I added a bit of Tequila to the pan and was lighter with the garlic sprinkling at the end, like another poster suggested. I'm not sure if it was necessary, but the result was wonderful! I served with the campfire greenbean recipe (on this site) and cous cous.

This was EXCELLENT!!! (even thought I may have burned it just a little bit, somehow even the burned part was good) :) Next time I'll be sure to let the chicken cook on each side a little longer before I add the lime/garlic mixture. I think the garlic powder cooks very quickly. In spite of the slight burn, the chicken was still incredibly moist and a big hit. I served it with rice pilaf and corn. :)

Grilled the chicken, then cooked in skillet with doubled batch of sauce for 5 minutes. My husband said he couldn't think of a more delicious chicken dish! My kids, usually very picky, ate it up too.

Very good recipe, very enjoyable. I made it into a marinade with 3 tbsp of orange juice as well. I omitted the oil & butter. Marinated for an hour and grilled on the BBQ. One of our fav's!

This is a great easy chicken recipe that is a hit every time! I use this recipe for 2 chicken breasts instead of 4. I always use fresh minced garlic instead of powder, double the cayenne (we like heat!), and add chopped cilantro then let it all marinade in a ziploc bag for 3-4 hours before cooking. After the chicken is done cooking, I remove the breasts and add sliced onions to the pan, saute until tender, then add a cornstarch slurry to make a gravy to top the chicken served over cilantro rice. Yum!

Yum! A great way to spice up chicken, goes great with veggies. I have made it a handful of times already and just started to add the thyme since I did not have it on hand at first. It is good with or without the thyme.

Delicious! It's not too spicy, but has delicious flavor. Instead of cooking it in all that butter and oil, I put it on a sheet of foil that I sprayed with cooking spray on my indoor grill. I sprayed both sides of the chicken and then sprinkled the spices on top. After cooking on both sides I drizzled the lime juice over it and then added a few shakes of the garlic powder. Yum!!

My fiance and I LOVED this recipe! I wish I could give it more than 5 stars! I followed the recipe pretty close, only doubling the amount of seasonings and adding a little chicken broth per other reviews and WOW it was soo good! I chopped up the chicken and added it and the sauce from the pan to some pasta...Yum!

I was using this to teach my 12 year old son an easy recipe. We put the spices on the chicken and were getting ready to put it in the pan when Dad changed our plans. So we threw the chicken into a ziplock bag for a few hours and when we got home, Dad decided to teach the 12 year old how to grill it instead. It turned out AMAZING. My 10 year old who avoids all meat as though it is evil, said it was good and he would eat it again. WOW. We did pour a little bit of lemon juice into the ziplock bag with the chicken and they put a small pat of butter on the chicken just before they took it off the grill. Easy and tasty recipe. Thanks!
