This is close to how I make my chili seasoning mix. I used california ground chili powder (less heat, same great flavor) and I add two teaspoons of onion powder and a teaspoon of paprika. I season my meat as it's cooking with sea salt and fresh ground pepper so I don't bother adding it to the chili seasoning mix.

rating just the seasoning since i didnt have any this worked great. it is a little spicy and i have a little one so i cut the cayenne but otherwise this is better than the packet and alot cheaper too. thanks

I recently was making chili and found myself without a chili seasoning packet. I looked up how to make chili seasoning myself and came upon this recipe. I didn't have any coriander so I left that out but kept the rest the same. I WILL NEVER GO BACK TO STORE-BOUGHT PACKETS! This was very fresh tasting and I thought it made my chili even better. Thanks!

Cut this recipe in half.....and only made the spice mixture. Also added 2tblspns of masa harina and used this mixture for Debdoozies Blue Ribbon Chili from this site. Loved it!

Unfortunately, I had to tweak it--dropping the serving amount down to 5 versus 40 listed, because of the change, it threw off the measurements, and I ended up eyeballing it. It still turned out fantastic, and I increased cayenne pepper since my boyfriend enjoys spicy dishes. I tried sirloin steak & ground, it was amazing. I added a bit of water to make it soupier. To make it more fall-festive like, I diced up yellow, orange and red peppers and some jalapenos, onions and mushrooms (all fresh). It gave it a nice coloring! We let it simmer too to give it a full flavor! We love the kick that it had!

Very good spice mix! I too made my own chili but will use this mix again. I used all of the spices added 3 cans of water and at the end added masa flour dissolved in water to thicken. Yum

I love this recipe and so does everyone who I've ever fixed it for. People ask me for the recipe all the time. Although, I have made changes to the recipe. I use all the seasonings the recipe calls for, I have changed the "soup"ingredients. I don't use the round steak, I use all ground beef. I don't use the oil. I add a can of tomato soup to make it thicker and I don't use chili beans, I use light red kidney beans. Also, I don't puree the beans, but I do run both can through a blender until they are coarsely chopped. I highly recommend this recipe.
