Spicy Chili Seasoning Mix

4 tablespoons chili powder
2 1/2 teaspoons ground coriander
2 1/2 teaspoons ground cumin
1 1/2 teaspoons garlic powder
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
ADDITIONAL INGREDIENTS:
1 pound boneless round steak, cut into 1-inch cubes
2 teaspoons vegetable oil
1 pound lean ground beef
1 medium onion, chopped
1 (28 ounce) can diced tomatoes, undrained
2 (15 ounce) cans chili beans, divided

DIRECTIONS
Combine the first six ingredients. Store in an airtight container in a cool dry place.
FOOTNOTE
To prepare chili: Lightly brown steak in oil in a Dutch oven; add 3 teaspoons of the seasoning mix and toss to coat. Add ground beef; cook until meat is no longer pink. Add onion; cook until tender. Add tomatoes and 2 more teaspoons of mix. Stir in one can of chili beans. Place the other can in a blender; cover and process until smooth. Add to chili. Cook on low for 30-40 minutes or until meat is tender. Yield: 10 serving (2-1/2 quarts) per batch.

I love this recipe and so does everyone who I've ever fixed it for. People ask me for the recipe all the time. Although, I have made changes to the recipe. I use all the seasonings the recipe calls for, I have changed the "soup"ingredients. I don't use the round steak, I use all ground beef. I don't use the oil. I add a can of tomato soup to make it thicker and I don't use chili beans, I use light red kidney beans. Also, I don't puree the beans, but I do run both can through a blender until they are coarsely chopped. I highly recommend this recipe.

Very good spice mix! I too made my own chili but will use this mix again. I used all of the spices added 3 cans of water and at the end added masa flour dissolved in water to thicken. Yum

We only used the spices in this recipe, but the combination was very good! We like spicy chili so used about 2/3 of the spices in with 2lbs of ground turkey.
